Simple Ingredients Needed for Authentic Chicken Fried Rice
- Oil – You need to have oil to get a nice sear on the chicken and rice mixture.
- Chicken – Use boneless skinless chicken or chicken tenderloins that you dice up into cubes.
- Minced Garlic – Adds tons of flavor to the dish.
- Soy Sauce and Teriyaki Sauce – Adding these two together really helps give a lot of flavor to the chicken and rice and vegetables.
- Eggs – Eggs are used for making a scrambled egg to pair with the rice.
- Onions - a Yellow onion or white onion is best. Save the green onions for the top.
- Peas, and Carrots – Here you have some nice veggies to add flavor to the dish.
- Rice – You will want to use pre-cooked rice for this recipe. Having cold rice is going to help give you the right texture.
- Butter – The butter adds tons of flavor to the dish.
- Salt and Pepper to taste
Variations to Recipe
Chicken – If you want you can swap the chicken with steak or even a ground chicken. Just make sure to cook the meat all the way through. Marinated chicken also adds more flavor to the already best-fried rice recipe.
Vegetables – Now you can also add in other fresh vegetables like sliced zucchini, corn, green beans, fresh ginger, red bell pepper, etc. Feel free to do whatever vegetables you prefer.
Rice – Now any kind of rice works, you will find that most use white rice for fried rice but jasmine rice works well too. Cook the rice in a pot or in a rice cooker.
Sauces - You can substitute various sauces such as oyster sauce, homemade yum yum sauce, or fish sauce if you prefer.
Optional Seasoning for Chicken Fried Rice - Garlic powder can be used in place of minced garlic.
Storing Leftover Fried Rice
Refrigerate – You can store any of the rice you do not eat right away in the fridge in an airtight container. It will store for 3-4 days in the fridge. Then you can warm it up in the microwave or even a skillet on the stove. If you heat up on the stovetop add a splash of water to help prevent the rice from drying out.
Freezer – You can also freeze any of the fried rice and chicken you do not eat right away. Just freeze for 3-4 months in a freezer container or plastic bags. Then just thaw in the fridge overnight and reheat.
Do I need to preheat the Blackstone before cooking?
Yes, you will need to preheat the Blackstone before cooking. I like to allow my flat top to get nice and hot for at least 10 minutes or so. You will find it helps for a more even cook.
Can I use cauliflower rice instead of regular rice?
Of course! If you want a lower-carb dinner reach for cauliflower rice instead. It will help to lighten the carbs but still taste just as delicious.

Chicken Fried Rice Ingredients
- Vegetable oil
- Boneless Skinless Chicken Breasts
- Minced garlic (fry with oil before rice)
- Soy Sauce
- Teriyaki sauce
- Sesame oil for frying rice
- Sesame seeds to go on the chicken breasts
- Eggs
- Diced Onion
- Frozen Peas and Carrots
- Cooked Rice (I like to use leftover rice for this recipe)
- Butter
- Salt
- Black pepper

How to Make Chicken Fried Rice on the Blackstone
Start by preheating the Blackstone griddle to medium high heat. Coat the blackstone’s surface with a thin layer of sesame oil (hibachi spatulas are the easiest to use for this great fried rice recipe).
Place boneless skinless chicken breast on preheated grill and sprinkle with sesame seeds.
When the bottom side is browned, flip and continue cooking.
Cook until the second side is browned. Then slice into thin strips.
Continue to chop into cubes as they cook. Sprinkle with drops of toasted sesame oil, cover, and continue to cook until cooked through.
Remove the chicken breasts from the grill and set them aside.
Next Steps
Oil grill and break the eggs. Fry until done while chopping as they fry. You can use beaten eggs if you prefer.
Once done, remove from grill and set aside.
Coat the grill with sesame oil. For best results, fry minced garlic over medium heat until browned.
Fry the chopped onions in sesame oil as well until translucent. (We cut the onion in quarters so that we can remove them from the mixture before the end because one person does not like onions.)
Move minced garlic to the side of the grill and the fried onions to the cooler side of the griddle.
Coat the Blackstone griddle with more sesame oil to fry the cooked day-old rice.
Dump the rice onto the grill and fry. Sprinkle soy sauce over the entire rice mixture and work through.
Mix in your fried onions, minced garlic, and fried eggs. Continue cooking for 3-4 minutes.
Add Teriyaki sauce to coat the entire mixture. Stir around.
Place the two bags of frozen carrots and peas on the grill and heat up.
Cut the butter into slices and place on top of the rice. Once melted, mix the mixture around.
For the last step, add chicken and mix together.
Once the carrots and peas are heated through, mix them together.
Let the chicken fried rice cook for a few minutes to marry the flavors.
