Peppermint Cheesecake with Christmas Tree Meringues
I love Christmas time so much that we are celebrating Christmas in July. I know, I know, Halloween isn't even here yet. But it's never too early in my opinion to start thinking about Christmas recipes.
One of my favorite things are no bake recipes. This holiday cheesecake is a delicious holiday recipe made with just a handful of ingredients.

The holiday season can be overwhelming. But deciding on what to serve or bring to your next get-together doesn't have to be.
No one wants to cook or slave over a hot stove when the company is coming. Which is why this no-bake Christmas Peppermint Cheesecake recipe with Christmas Tree Meringues is perfect for that reason.
It's an easy dessert for that time of year. A no-bake dessert with simple ingredients is always my favorite kind of recipe.
The cheesecake mixture has a delicious peppermint flavor with an OREO cookie crust that is an easy recipe for the Christmas season.
No-Bake Cheesecake Recipe Ingredients
OREO Crust Ingredients
- OREO Cookies
- Sugar
- Butter
Filling Ingredients
- Cream Cheese (room temperature)
- Cool Whip Topping (you can substitute heavy whipping cream if you would like. Whip until you have soft peaks)
- Powdered Sugar
- Sugar
- Peppermint Extract (a little goes a long way! Plus, you can substitute vanilla extract if you aren't a fan of peppermint)
- Pink Gel Food Coloring (or more to achieve your desired pink color)

If you don't have a food processor or chopper, place your OREO cookies in a Ziploc bag and crush them with a rolling pin.

How to Make No-Bake Peppermint Cheesecake Recipe
Start by placing your OREO cookies in a food processor or chopper. Chop until you have fine crumbs.
Add your melted butter and sugar and mix well.
Place parchment paper along the edges of the pan so that the sides of the cheesecake do not stick.
Dump your crushed OREO mixture into the springform pan and press down with a cup.
Place in freezer while preparing your creamy mint filling.
Place your cream cheese in medium bowl and beat at high speed until soft peaks form.
Add your sugar, powdered sugar, and peppermint extract. Mix well.
Fold in your whipped cream with a wooden spoon.
Add your pink gel food coloring. If you don't have pink food coloring on hand, you can use a drop of red food coloring.
Pour in your cream cheese mixture and shake to release any bubbles. Tap the pan on the counter also.
Chill for several hours or until ready to serve.
Prepare your Christmas Tree Meringue Cookies if you have not done so yet.
When the cheesecake is chilled, top with the Tree meringues, whipped cream, or any of the other topping variations above.
Slice with a sharp knife and enjoy!

- 20 OREO Cookies
- 1 Tablespoon of Sugar
- 3 Tablespoon of melted Butter

- 8 oz. Cool Whip Topping (you can substitute heavy whipping cream if you would like. Whip until you have soft peaks)
- ¼ cup Powdered Sugar
- 1 cup Sugar
- 1 teaspoon Peppermint Extract (a little goes a long way! Plus, you can substitute vanilla extract if you aren’t a fan of peppermint)
- 5 drops of Pink Gel Food Coloring (or more to achieve your desired pink color)
