Ingredients

  • ½ cup cream cheese
  • ½ cup shredded sharp Cheddar cheese
  • 12 fresh jalapeño peppers halved lengthwise, seeds and white membranes removed
  • 12 slices thick cut bacon

Instructions

Step 1: Prepare the Baking Sheet

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet or sheet pan with aluminum foil for easy cleanup.

Step 2: Make the Cheese Filling

  • In a medium mixing bowl, mix cream cheese and sharp cheddar cheese together until smooth. For extra flavor, add a dash of garlic powder and onion powder.

Step 3: Prepare the Jalapeños

  • Slice the jalapeno's in half, and scrap out the seeds with a spoon.

Step 4: Stuff the Jalapeños

  • Take each jalapeño half and fill it generously with the cream cheese mixture. You can also sprinkle in pepper jack cheese or Monterey Jack cheese for an extra cheesy bite.

Step 5: Wrap in Bacon

  • Place a half slice of bacon around each cream cheese-stuffed jalapeño, ensuring it wraps tightly. Secure with a toothpick if necessary. Place them in a single layer on the prepared baking sheet.

Step 6: Bake Until Crispy

  • Bake for 25 to 35 minutes, or until the bacon slices are crispy and golden brown. For best results, flip halfway through baking to ensure even cooking. Use a paper towel-lined plate to drain any excess bacon grease.

Step 7: Serve and Enjoy

  • Let the poppers cool slightly before serving. Pair them with a side of ranch, sour cream, or your favorite dipping sauce.

Tips for Success

  • Spice Level: For an extra spicy kick, leave in some seeds or use smaller peppers.
  • Best Way to Store: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Make Ahead: Stuff the jalapeño halves and wrap them in bacon, then store in a freezer bag until ready to bake.
  • Air Fryer Option: Cook at 375 degrees F for 10-12 minutes for air fryer jalapeño poppers.
  • Double Batch: Make extras because these will disappear fast!
