Air Fryer Mashed Potato Cakes aka potato pancakes or potato latkes, are loaded mashed potato cakes with crispy bacon, green onion and cheddar cheese are the bomb.

Air Fryer Mashed Potato Cakes
Whether you have a regular Air Fryer, Ninja Foodi or the CrispLid, the Air Fryer Mashed Potato Cakes will come out tasting amazing.
Loaded with cheddar cheese, crispy bacon and green onion, this is the perfect way to use up leftover mashed potatoes.
My mom always made the best polish potato pancakes. However, it is nearly impossible to replicate them because there was no recipe. A handful of flour, a pinch of salt, 2 medium white potatoes.
My hands are twice the size of hers and let's just say I gave up trying to make her potato pancakes.
And while these have a different texture to them than hers did, these air fryer potato latkes are as close to tasting like hers as I'm going to get.
Plus, these loaded mashed potato cakes are so much less fattening as they aren't fried in a ton of crisco. 😉
Loaded Mashed Potato Cakes Ingredients
- Mashed potatoes
- Shredded cheddar cheese
- Bacon, cooked and crumbled
- Green onion, diced
- Salt
- Pepper
- Eggs, beaten
- Flour
- Panko crumbs
- Sour Cream (optional)
- Jelly (optional as this is what I put I on mine!)

Fry the bacon until crispy and drain on a paper towel until cool.
Crumble into small bits.
Place the bacon bits into a large bowl.
Add your mashed potatoes, cheddar cheese, and green onions.
Stir to combine
Line a baking pan with parchment paper.
Place all of the mashed mixture on the baking pan.
Spread the mashed potato mixture evenly across the pan.
Place it in the freezer for 30 minutes.
Use a circle cookie cutter and cut out circles of the mashed potato mixture.
Set to the side.
Continue until you have all of the circles cut out.
Prepare your dredging station.
Flour in one bowl, beaten eggs in the second bowl, and the panko crumbs in a third bowl.
Dip your potato cake into the flour, then eggs and finally the panko crumbs.
Place the potato cake in your Air Fryer,
Make sure to ONLY do one layer of the potato cakes in the Air Fryer.
Set the temp to 370 for 6-8 minutes.
For best results, serve immediately, while hot and crispy.

- 1 teaspoon salt
- ½ teaspoon pepper

- 2 cups panko crumbs
- Jelly (optional as this is what I put I on mine!)
