Little Mermaid Cupcakes Recipe
Under the Sea, Under the Sea!!! These cupcakes are so fun and colorful! Add a "Dingle Hopper" and you'll have a perfect cupcake for any disney party! These fun Mermaid Cupcakes have beautiful colors and a lovely under the sea theme. They're appropriate for any gathering, and they're especially perfect for anything water related. Makes 24 cupcakes
Cupcake Ingredients:
(You can also use pre-made cupcakes if you would like.)
- Flour
- Baking powder
- Arm & Hammer Baking soda
- Salt
- Sugar
- Eggs, room temp
- Vanilla bean paste
- Vegetable oil
- Whole milk, room temp
- Vanilla
Candy and Decorations
Vanilla Frosting Ingredients:
- Unsalted butter (softened)
- Powder sugar
- Heavy whipping cream
- Vanilla bean paste
- Medium Bowls
- Teal and sky blue gel coloring
- Piping bag
- Large star tip

MOLD FONDANT PIECES BEFORE YOU BAKE CUPCAKES
Cupcake Directions:
1. Preheat oven to 350 degrees.
2. Line your cupcake pan with paper liners.
3. In a bowl combine the flour, baking powder, baking soda, and salt.
4. Whisk well. Set aside.
5. In a second bowl , mix together with your electric mixer sugar and eggs beating until well combined.
6. Add the oil, whole milk, and vanilla bean paste to another bowl, stir to mix.
7. Take this bowl of ingredients to the second bowl with sugar and eggs, again mixing well to combine.
8. Slowly add the wet ingredients to the dry ingredients stirring just enough to blend all of the ingredients together.
9. Using a medium ice cream scoop fill each cupcake tin
⅔rd full. Bake at 350 degrees for 18 minutes.
10. Remove cupcakes from the oven and allow to cool in the pan for about 5 minutes.
11. Transfer to a wire rack allowing them to cool completely.

Frosting the Mermaid Cupcakes:
1. Cream powder sugar, vanilla, maple syrup and butter until mixture is light and creamy. If for some reason it doesn’t cream you can add a few drops of heavy whipping cream until it creams.
2. Test to see if the frosting can form and hold a stiff peak by getting a spoonful of frosting and turning the spoon upside down to see if the frosting stays on the spoon or falls off. If it stays on the spoon, you’re in good shape if not, add more powder sugar ¼ cup at a time and mix well.
3. Once the frosting is ready split into 3 bowls.
4. Add the teal color to one bowl, the sky blue color to the second bowl and leave the 3rd bowl white.
5. Using a spoon, scoop some teal frosting into ⅓ side of the frosting bag, the sky blue frosting to another ⅓ side, and add the white to the last ⅓ side.
6. Twist the open end of the pastry bag and squeeze the frosting to the tip, Start at the outer edge of each cupcake moving in a circle inward to the center of the cupcake.

How to Decorate Mermaid Cupcakes
1. Place the white shells onto a piece of paper and spray with the gold spray.
2. Using a pair of scissors and cut about 3-4 inches of the grass. Place the grass into the center of the frosting.
3. Place the fork on the right side of the grass.
4. Put some shells randomly onto the cupcakes.
5. Top the decorations off with some pearls.
6. Enjoy!
