Red White and Blue Poke Cake Patriotic Cupcakes
Memorial Day is upon us shortly and that only means one thing...the start of summer. I look forward to the holiday weekend every year.
It used to be tradition for us as an entire family (I'm talking 10 separate families) to go camping every year together.
We would pack up our tents and head out for the weekend. I'm talking 45 years here. That's a long time!
Then we moved up to cabins (with no facilities of course) and we still had a blast.
Now, we go glamping, lol. But no matter how you do it or what you do, the Red, White, and Blue Poke Cake Patriotic Cupcakes are perfect for Memorial Day, 4th of July and Labor Day.
You can even change out the jello colors for other holidays. And with Covid still around, everyone gets their own Poke Cake Patriotic Cupcakes.
Makes 24 cupcakes
Prep time: 30 minutes
Cook time: 20 minutes
Chill time: 1 hour
Jello Poke Cake Ingredients
- White cake mix, prepared as cupcakes
- Red gelatin (I used strawberry Jell-o)
- Blue gelatin (I used berry blue Jell-o)
- Boiling water
- White icing
- Red, white, and blue sprinkles

How to Make Poke Patriotic Cupcakes
Prepare cupcakes according to package directions.
Allow the cupcakes to cool completely, then use a straw to poke holes in each cupcake.
Combine each of the gelatin flavors with one cup of boiling water and stir until the gelatin is dissolved.
Allow the gelatin to cool, then use a spoon to pour each color into the holes on the cake, alternating the colors to create stripes.
Place the cupcakes in the refrigerator to chill for one hour, then top with icing and sprinkles before serving.

- 2 containers white icing
- Red, white, and blue sprinkles
Instructions
- Prepare cupcakes according to package directions.
