Dr. Seuss Lorax Cupcakes Ingredients
- 8 Prepared Cupcakes, unfrosted
- 1 Can Vanilla Frosting
- ¾ cup Shredded Coconut
- 1 Pkg. Runts Candy
- 4 Large Marshmallows
- 8 Edible Eyes
- Rainbow Nonpareil Sprinkles
- 4 White Sucker Sticks
- Food Coloring—yellow, pink, purple, orange, blue
How to make the Truffula Tree Cupcakes:
1. Frost four of the cupcakes with white frosting in a smooth, flat layer, and
sprinkle the rainbow sprinkles all over them.
2. Split the coconut evenly into 3 small bowls, and color each one a different color
with a few drops of coloring. I used pink, purple, and blue.
3. Put a marshmallow on the end of each stick, and spread a thin layer of frosting
over the marshmallows.
4. Roll each frosted marshmallow in a color of coconut until completely coated.
Then stick each marshmallow truffula tree into the middle of each sprinkled
cupcake.
For the Lorax Guy:
5. Color a little bit of frosting with the orange coloring and frost the other four
cupcakes.
6. Put on two eyes, an orange runt nose, and 2 banana runts above the eyes for
his eyebrows.
7. Color the rest of the frosting yellow, and put in a small plastic baggie, and snip a
tiny corner off to pipe thin lines.
8. Pipe a big thick mustache on each cupcake.
9. These are fun and easy treats to make for Dr. Seuss Day!

These are so cute! I know kids love cupcakes even more when they are decorated, I brought some over where we were going to have dinner, and as soon as their little boy saw my cupcakes I brought, he screamed and hollered all dinner long he wanted them and not his dinner. I felt a little naught but secretly I loved that he wanted my cupcakes so bad!
