Fiesta Chicken Taquitos Recipe
Sure you can go to the store and pick up a box of taquitos already made. But there's nothing like the taste of homemade Fiesta Chicken Taquitos. Filled with cheese, chicken and all the spices that will get your family together at the table.
Serve with sour cream and salsa on the side for dipping. These are baked, but they can also be air fried at 350° for 20 minutes on each side. You can also make them rotisserie chicken if you don't want to make your own chicken.What’s Needed
- Cooked Shredded Chicken (A Rotisserie Chicken works great)
- Small Tortillas
- Cream Cheese
- Shredded Cheddar Cheese
- Chili Powder
- Garlic Powder
- Cumin
- Green Onions (chopped)
- Tablespoons Lime Juice
- Tomato, Lime, Green Onions, Sour Cream, Salsa, Guacamole Salsa for Toppings

How to Make Fiesta Chicken Taquitos
Preheat oven to 350 degrees.
Soften cream cheese in microwave for about 20 seconds. Place in bowl and add chili powder, cumin, garlic powder, lime juice, and chopped onions. Mix well.
Next, add in the shredded chicken and cheese. Mix.
Now, take about 3 tablespoons of mixture and place on the tortilla, spread it out a little, then roll tightly. Place seam side down on a non-stick baking sheet.
Bake for 12-15 minutes or until tortilla is light brown around the edges.
Serve with toppings of your choice and Enjoy!

- 2 Cups Cooked Shredded Chicken (A Rotisserie Chicken works great)
- 10-12 Small Tortillas
- 4 oz. Cream Cheese
- 1 Cup Shredded Cheddar Cheese
- ½ teas. each; Chili Powder, Garlic Powder, & Cumin
- 3 Green Onions (chopped)
- 2 Tablespoons Lime Juice
- Tomato, Lime, Green Onions, Sour Cream, Salsa, Guacamole Salsa for Toppings
