Mini Frittata with Sausage and Arugula
The Sausage Arugula Mini Frittata are perfect for Christmas morning or when you need a grab and go breakfast. Made with any type of sausage you have on hand, they will be your go to breakfast.
You can also make these with bacon or just add more vegetables for a vegetarian breakfast.
Best Mini Frittata Ingredients
- Sausage chopped (you can use smoked sausage, pork sausage, turkey sausage, etc.)
- Eggs
- Cheddar Cheese (grated)
- Ripe Tomatoes (chopped)
- Red Onion (¼ cup, chopped)
- Salt and Ground Back Pepper (to taste)
- Bunch of Fresh Arugula
- Olive oil for frying

How to Make Sausage Frittatas
Pre-heat oven 375°F.
Heat fry pan with oil. Pan fry sausage until slightly browned. Set aside.
Chop all ingredients.
In the same pan, sauté onions until translucent. Add tomatoes, salt and ground black pepper. Mix well for 1 to 2 minutes. Turn off heat and add fresh arugula and mix with sausage. Set aside.
In a bowl, beat eggs and mix with cheddar cheese and ground black pepper. Season with salt sparingly, particularly when using strong cheddar cheese. Toss in sausage mixture. Mix well.
Mix eggs and cheese mixture with sausage mixture.
Pour sausage and egg mixture in slightly greased large individual silicon muffin cups (or a regular muffin tin pan lined with paper cups). Muffin cups are filled to about ¾ of the mixture.
Bake for 15 to 20 minutes or until eggs have been fully cooked. Opt to test with a toothpick by pricking the center. Toothpick should be clean when pulled, no more liquid eggs coming out.
You can enjoy these on the go or served when you’ve got some company or breakfast or brunch.

- 4 Eggs
- 1 Cup Cheddar Cheese (grated)
- 2 Ripe Tomatoes (chopped)
- 1 Small Red Onion (¼ cup, chopped)
- Salt and Ground Back Pepper (to taste)

- Olive oil for frying
