This Slow Cooker Italian Chicken and Rice is an easy dinner that the whole family will love. Made with 5 simple ingredients and a zesty Italian flavor!
It is an easy and healthy dinner recipe. Throw everything in the crockpot and in a few hours you have a delicious, crock pot chicken and rice dish. One of the easiest one pot meals you will ever make!

Makes 4 servings
Prep time: 5 minutes
Cook time: 4 hours
Zesty Italian Chicken Ingredients
- White rice
- Chicken broth
- Boneless, skinless chicken breasts
- Italian dressing (I used Olive Garden)
- Shredded mozzarella cheese

How to Make Crockpot Chicken and Rice Casserole
Spray the bowl of the slow cooker with nonstick cooking spray or place a crock pot liner inside.
Combine the white rice and chicken broth in the bowl and stir.

Top the rice with the chicken breasts, then pour the Italian dressing over the top, making sure to coat each breast.


Place the lid on the slow cooker and cook on high for four hours or low for six hours.
When the cook time is up, remove the chicken from the slow cooker and shred it with a fork.

Return the chicken to the slow cooker and add the cheese.

Stir to mix, then allow to rest until the cheese is melted.



Serve immediately.

Should the rice be cooked and can the chicken be fresh or is it better frozen?

No, the rice does not have to be cooked and I always use thawed chicken in a slow cooker. I once read that you shouldn't put frozen in a crockpot, so I never do.
