Easy Italian Tortellini Salad Recipe
When I think of Tortellini, I think of pasta with tomato sauce or alfredo sauce. I have also made a Tuscany Tortellini Soup. I never thought of eating it cold.
It wasn't until this past summer that I've ever had an Italian Tortellini Salad and I can't believe how easy and good it was.
So, when my Cuisinery Food Market order arrived with the Ricotta and Spinach Tortellini in it, that my husband (I should say me since I told him how to make it, lol!) decided a make a cold salad with them in order to complement our Instant Pot Pork Ribs recipe.
They are filled with soft ricotta cheese and spinach leaves, so it tastes just like what you would find in Italy and are perfect for the Italian Tortellini Salad recipe.
The best part is you can add your choice of ingredients to your liking. If you don't like tomatoes, then leave them out. Not a fan of shredded Parmesan cheese? Use shredded Mozzarella.
Make it a meal in itself by adding pepperoni, salami, ham, green and red peppers, and onions.
The choice is yours. This salad can also be made ahead of time and is a great dish for potlucks and church suppers.

- Cherry Tomatoes, cut in half
- Shredded Parmesan Cheese

How to Make an Easy Italian Tortellini Salad
Prepare the tortellini according to the package.
Once done, drain and rinse in cold water to stop the cooking process.
Cover and place in refrigerator overnight to chill.
When ready to use, add all the ingredients, and mix well.
Serve with your favorite meal.
