Bunny Easter Cupcakes

There are a ton of Easter Bunny Cupcakes on Pinterest and some are cuter than others. These are easy and are just as fun being made with bunny cupcakes toppers. You can also make these quicker by using store bought cupcakes if you are short on time. Guaranteed to put a smile on your face, these Bunny Easter Cupcakes definitely bring out the cute factor.

Makes 24 cupcakes 

Easter Bunny Cupcakes Ingredients

  • 2 C sugar
  • 1 3/4 C flour
  • 3/4 C cocoa
  • 1 tsp baking powder
  • tsp baking soda
  • One tsp salt
  • 2 eggs, room temp
  • 1 C whole milk, room temp
  • 1/2 C canola
  • 2 tsp vanilla
  • 1 C boiling water

Chocolate Cupcakes Directions

1. Preheat oven to 350 degrees. 

2. Line cupcake tins with paper liners.

3. Whisk the sugar, flour, cocoa, baking powder, baking soda and salt in a mixing bowl.

4. Combine the eggs, milk, oil and vanilla in a bowl.

5. Add this to the dry ingredients beating on medium until the batter is smooth.

6. Gradually add the boiling water, milk and oil and blend together until the batter is smooth.

7. Using a medium scoop fill the paper lined cupcake tins with the prepared batter.

8. Bake at 350 degrees for 20-25 minutes until an inserted toothpick comes out clean.

9. Allow them to cool before transferring to wire racks.

Bunny Frosting Directions 

1. Beat powder sugar, butter and vanilla in a bowl.

2. Add in the heavy whipping cream and continue to mix until stiff peaks form.

3. Scoop the frosting into a pastry bag with a large round tip.

4. Twist the open end of the pastry bag to push the frosting to the tip.

5. Starting around the edge pipe a circle and pipe it in to the center creating a peak.

6. Set aside.

How to Decorate Bunny Easter Cupcakes

1. Place the bunny ears on the top of the cupcake.

2. Add two eyes

3. Using the pink frosting, add a nose.

4. Using the black frosting add the mouth and whiskers.

  • 3 C + 1/2 C powder sugar
  • 2 tsp vanilla
  • 3-5 TBSP heavy whipping cream.

  • pink gel frosting
  • black gel frosting
