Campfire Reuben Recipe
Can you believe that St. Patrick's Day is only a few days away? It seems like it was just Christmas. However, I just couldn't wait till the 17th to make my Campfire Reuben Sandwich recipe.
The Campfire Reuben Recipe is easy to make on the BBQ grill, campfire, Air Fryer, or even in a frying pan. It was just easier to make it outside since it was almost 90°. I didn't want to heat up the RV and work the AC any harder.
Your family will love the hearty rye oozing with melted Swiss cheese, thin sliced corned beef, sauerkraut, and thousand island dressing.

Notes
You can use butter on your bread if you prefer in the Pie Iron. I am just trying to save some calories using the spray.
How to Make a Campfire Reuben on a Grill
Heat up your grill on high or build your campfire, whichever you are using.
Spray the inside of the Pie Iron OR butter your bread.
Lay 1 piece of bread on each side of Pie Iron.
Place a couple thin slices on both sides of the bread.
On one side of the bread, put your thousand island dressing.
Then top with sauerkraut.
On the other side place your Swiss cheese.
Fold the Pie Iron together carefully. I brought the cheese side over so I didn't lose any sauerkraut.
If making on a grill, place on grill and bring the cover down.
Time for 2 minutes then flip for another 2 minutes.
Repeat by flipping and timing for 2 minutes and then another 2 minutes on the other side.
I found that the more you flip, the more evenly it cooks.
How to Make a Reuben Sandwich over a Campfire
When making it in the campfire, we flip every 30 seconds for a total of 2 minutes. The wood is hotter than a grill so it's going to cook faster.
After the 2 minutes we will open it and check to see if it's done or it needs more time. Adjust accordingly.
