Southwest Mac & Cheese Ingredients
- Whole milk
- All-purpose flour
- Unsalted butter
- Goat milk cheese
- Gruyere
- Red bell pepper, chopped
- Orange bell pepper, chopped
- Yellow bell pepper, chopped
- Bacon, crisp cooked and crumbled
- Elbow macaroni, cooked and drained (or your favorite pasta noodle)
- Southwest seasoning
- Green onions (optional)

How to Make Macaroni and Cheese in a Cast Iron Skillet
Preheat oven to 350 degrees.
Combine the milk, butter, seasoning and flour to a pot on medium-high heat, stirring often until the mixture thickens.
Whisk in the cheese, until blended, then slowly add in the crumbled bacon mixing until combined.
Add the chopped peppers to the cooked macaroni, stir to mix well.
Stir in the cheese and bacon mixture to the macaroni.
Spray the cast iron skillet with cooking spray then add the macaroni and cheese mixture.
Bake at 350 degrees for 15 to 20 minutes or until the top is slightly browned.
Enjoy!
Notes: Make it more of a meal by adding rotisserie chicken, a can of chicken breast, tuna fish, or anything else that you would like.
If you have leftovers, you can also add it to a hamburger, hot dog or enjoy a waffle mac and cheese.

- 4 tsp. all-purpose flour
- ¼ C unsalted butter
- 1 C goat milk cheese and 1 C gruyere
- ½ medium each; chopped red bell pepper, chopped orange bell pepper, and chopped yellow bell pepper,
- 4 slices bacon, crisp cooked and crumbled
- 8 oz elbow macaroni, cooked and drained
- TBSP Southwest seasoning
- Green onions (optional)
Instructions
- Preheat oven to 350 degrees.
