How to Make Mini Apple Pies with Crown Royal Apple
To make the pastry, whisk the flour, sugar, and salt in a large bowl.
Add the cubed butter to the bowl of flour and cut it in until it resembles coarse crumbs.
Add the ice water into the flour mixture a little at a time using just enough water to make a workable dough.
Divide dough into 2 equal portions, wrap in plastic wrap, and put in the refrigerator while making the filling.
To make the filling, whisk the brown sugar, cinnamon, ground cloves, nutmeg, salt, and flour in a medium bowl.
Add the apples, melted butter and Crown Royal Apple and stir to combine.
Line a cookie sheet with parchment paper. Set aside.
On a floured board, roll out one of the portions of dough to ⅛” thick.
Use a 3”- 4” round biscuit cutter to cut out 12 circles of dough and place them on the prepared baking sheet.
Whisk together the egg and 1 teaspoon of water for the egg wash.
Brush the 12 circles of dough with the egg wash and top with a tablespoon of the apple filling.
Roll out the second portion of dough, cut out 12 more circles and use a sharp knife to cut vents in them.
Place vented dough circles on top of the filling and seal the edges by crimping with a fork.
Brush the top of each pie with the remaining egg wash and sprinkle with coarse sugar.
Bake in a 400F oven for 20-25 minutes until golden brown.
Cool on a wire rack.
