Slow Cooker Cuban Chicken Recipe
Dinner doesn't get any easier than dumping everything in the crock pot or Ninja Foodie and having it ready when you come home from work.
Tender shredded chicken served with a side of rice and tortillas in this dish inspired by Cuban comfort food.
This is a no-fuss, one-pot meal the entire family will love. Cooking in the RV is so easy with my Ninja Cooking System.
This is by far one of my family's favorite recipes almost as much as the Instant Pot Pulled Pork or the Crock Pot BBQ Hawaiian Chicken.
Cuban Chicken and Rice Ingredients
- Red peppers, chopped
- Onion, chopped
- Boneless chicken breasts (3-4 breasts)
- Frozen corn kernels
- Chicken broth
- Green olives
- Chili powder
- Garlic cloves, minced
- Salt
- Cumin
- Black pepper
- Oregano
- Lime, juiced (optional)
- Diced tomatoes with green chili
- Tomato sauce
- Cooked white rice for the side, optional
- Tortillas, optional
How to Make Slow Cooker Cuban Recipes
1. Add chopped vegetables to bottom of crockpot, layer chicken over vegetables.
2. In a small bowl, combine remaining ingredients except for the lime juice, mix together.
3. Pour bowl contents into the slow cooker over the chicken. You can use crock pot liners
to make for easier cleanup. Cook on low 3-4 hours or high 5-6 hours. When ready to serve, squeeze in lime juice to crockpot
and stir and break up chicken breasts (if desired) with two forks.
4. Serve with rice and tortillas, if desired.
