Andes Grasshopper Cookie Cups Recipe
Like mint chip ice cream in mini pie form with a creamy mint filling inside a rich dark chocolate cookie crust made with a rich chocolate cookie crust. When chocolate and mint get together, mmm…magic happens. Cool mint and rich chocolate make a delicious cookie combo - perfect for a dessert.
Grasshopper Cookies Ingredients
- 1 ½ cups all purpose flour
- ⅓ cup cocoa powder
- Large egg
- tsp vanilla extract
- ½ cup salted butter, softened to room temperature
- half teaspoon baking soda
- ¼ teaspoon salt
- 1 cup granulated sugar
Andes Cookies Frosting Ingredients
- ½ cup salted butter, softened to room temperature
- 1 and ⅓ cup powdered sugar
- ⅛ teaspoon mint extract
- 2 tbsps heavy cream
- 3 drops green food dye
- ½ cup andes mints, pieces
How to Make Grasshopper Cookie Cups
1. Preheat oven to 350 degrees.
2. Lightly coat a mini muffin tin with vegetable shortening.
3. In a large bowl, whisk together the flour, cocoa powder, salt and baking soda.
4. In another large bowl, beat the sugar and butter together for 1-2 minutes.
5. Add the egg and vanilla extract and beat until combined.
6. Slowly add the dry ingredients into the wet ingredients and beat until combined.
7. Add about 1 teaspoon of cookie dough to each mini muffin cavity. (¾ full)
8. Bake cookie cups for 10-12 minutes.
9. Cookie cups will be soft when they come out of the oven. Use the back of a measuring spoon, shot glass or other small circle to gently press in the center of each cookie cup.
10. Allow the cookies to rest for 5 minutes before removing them to a wire cooling rack.
11. Let the cookies cool completely before adding the icing.
How to Make Andes Mint Cookies Frosting
1. Beat the butter with the heavy cream and powdered sugar until well combined.
2. Add the mint extract and food coloring and beat until well combined.
3. Using a disposable bag, Pipe the frosting on top of each cookie cup.
4. Sprinkle andes mints pieces on top of each cookie cup.
5. Enjoy!
