What Are Linzer Cookies?
The easiest way to describe this sweet treat is to say they are sandwich cookies similar to shortbread cookies.
The dough is usually cut into various shapes with cookie cutters, most often hearts—and filled with jam before being baked in an oven.
The distinctive pattern of the cookies is created by cutting out the centers of some pieces before baking.
The top cookies and bottom cookies are cut into the shape with an additional shape cut into the top to create a little space for a teaspoon of jam.

How to Make Heart Jam Cookies
Heat oven to 350 F (180 C).
In a mixing bowl of a stand mixer with a paddle attachment, cream butter and sugar until it gets light and fluffy consistency on medium speed.
Add the vanilla extract, and egg yolks and continue to mix with a wooden spoon.
Mix the dry ingredients, cinnamon, flour, and salt, and add to the mixture.
Mix the cookie dough by hand until it gets dough balls to form. It's easier if you have a few small balls of dough.
Put the dough in plastic wrap and rest in the refrigerator for 30 minutes
Roll out half of the dough into a lightly floured surface and cut it into hearts with the heart cookie cutter. The classic cookie should fit in the palm of your hand.
Cut the inside of half of the heart dough you cut again with a smaller cutter heart mold.
Place it on top of the cookie.
Place on a cookie sheet covered with parchment paper to prevent it from sticking.
Bake cookies in the oven for 12-15 minutes minutes. Be careful not to burn. (every oven works differently so keep checking starting at around 10 minutes.)
Remove from oven and rest for 10 minutes. Move to a cooling rack.
After it cooled down, spread a little jam of your choice in the centre of each heart and close the hearts with heart windows on it. (Make heart sandwiches.)
Dust the tops with confectioners’ sugar.
ENJOY 😊
