If you are a fan of the Instant Pot, you probably know how amazing soup is in the pressure cooker. You get that low and slow simmered flavor in a fraction of the time.
I haven't made this in a couple of months, so my family was looking forward to a comforting meal with the cooler weather. However, a bowl of soup is even great on a warm day.

Olive Garden Chicken Gnocchi Soup Ingredients
- Butter or olive oil
- White onion diced
- Garlic minced
- Dried garlic powder
- Dried thyme
- Salt and cracked black pepper to taste
- Little bit of Italian Seasoning (optional)
- Chicken broth or chicken stock
- Skinless chicken breasts, about 2 breasts (rotisserie chicken can be substituted)
- Whole milk or heavy cream
- Cornstarch
- Carrots coarsely shredded
- Potato gnocchi uncooked
- Fresh baby spinach
- Red Pepper Flakes (optional if you like spiciness)
- Bay leaf (optional)

- Sauteing the onion and garlic is going to elevate the flavor of this soup to a huge new level. You will find that the saute function is going to help add richness to the soup you would not have otherwise.
- You could use pre-cooked chicken if you have leftover chicken on hand. You would not have to do the 10-minute cook to cook the chicken, just toss the diced chicken in and move to the next steps.
- Feel free to change up the veggies you use in the soup, I find that the carrots and spinach compliment all the other flavors in the soup.
- Skinless chicken thighs can also be used for more chicken flavor in place of the boneless skinless chicken breast.
- Next time swap the spinach for kale if you would prefer a change.
- This soup can also be made in the slow cooker. Place everything in the crockpot and slow cook on low for 8 hours or high for 4 hours.
- Swap out vegetable broth to change up the flavor.
- Use Cauliflower gnocchi in place of potato gnocchi.
Storing Olive Garden’s Chicken Gnocchi Soup Leftovers
Go right ahead and store your favorite soup in an airtight container in the fridge for 2-4 days. Then reheat in the microwave or even on the stovetop. Once warmed serve with a salad, or crusty bread, or eat it alone.
Since this has some dairy you will find it will separate and curdle a bit once it thaws from being frozen. So it is recommended to not freeze this soup.
I think soup always tastes better the next day.
What is Fresh Gnocchi Made Of?
You will find this soup is made of tender chicken, and then potato gnocchi dumplings in a creamy broth.
They are small dumplings and a bit firm but soft and pillowy in the center. This soup is cream based so it is so delicious.
Is Gnocchi Healthy?
Gnocchi is not that healthy as it is a potato-based with flour and ingredients. You will find though in moderation it is a good food to enjoy and indulge in once in a while.
Is Gnocchi Pasta or Potato?
Gnocchi is a pasta-based item but has potatoes in it. So you will find it can confuse people as to what it truly is.
They are made from potatoes, eggs, flour, etc. So you have potato flour and a light pasta texture for a potato dumpling.
Where to Find Gnocchi in the Grocery Store
Most of the time you can find it in the pasta aisle. Sometimes though, I find some in the refrigerated section at Aldi.
How to Make Chicken Gnocchi Soup in the Instant Pot
Turn your Instant Pot on to sauté setting. Add in your butter to the bottom of the pot.
Once fully melted, add in your onions. Leave on the Saute setting for 3-5 minutes until onions are translucent.
Add your minced garlic to your onions for about 1 minute. Enough to quick release the flavor, but not to burn them (they are quick to burn).
Press cancel on your Instant Pot.
Add in your thyme, salt, pepper, broth, and raw chicken breasts.
Put the Instant Pot lid on the pot and place the valve in the sealing position. Cook on high pressure on high for 10 minutes.
Once time is done, release pressure, do a natural release by opening the pressure valve to release all the remaining pressure.
Remove your cooked skinless boneless chicken breast. Shred and then transfer back to your pot liner.
Turn your Instant Pot on to sauté mode.
In a separate small bowl, mix together your milk and corn starch to create a slurry.
Slowly stir your soup while slowly adding in your cornstarch slurry.
Add in the rest of the ingredients, carrots and gnocchi. Allow the gnocchi cooks according to package directions or for about 5 minutes until the gnocchi float or until done.
Add the fresh spinach and allow them to cook and wilt into the soup. This should take about 1 minute.
