How to Make A Peppermint Cake Mix Cookie
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Beat together the cake mix, butter, eggs, and extract until smooth and well combined.
Fold in the chocolate chips.
Use a cookie scoop or tablespoon to scoop out the dough and roll it into a ball.
Place the ball on the lined baking sheet and press down slightly with the palm of your hand.
Top the dough with crushed peppermint.
Bake the cookies for 8 to 10 minutes, until the edges and firm but the center are still soft.
Allow the cookies to cool on the baking sheet for five minutes, then transfer to a wire cooling rack to cool completely.
