Whether you are making them for breakfast, a quick snack, or even breakfast for dinner, they are a fun treat for the entire family.Serve with a side a bacon or sausage, top with some strawberries, bananas, and whip cream, for a delectable dish. Make them mini or make them big, homemade Rainbow Pancakes from scratch will outdo any store bought pancakes and make a great camping food.
However, if you are pressed for time and like simple in the mornings, you can also make these with a box of pancake mix. No one will shame you (I'm not gonna lie, I've done it! 😉) especially if you aren't a morning person like me.
Mini Rainbow Pancakes Ingredients
- Eggs
- Milk
- Oil
- Flour
- Sugar
- Baking Powder
- Baking Soda
- Salt
- Vanilla
- Food Coloring

How to Make Colorful Pancakes
Beat eggs, and add remaining ingredients in order and mix until smooth.
Divide batter into 6 equal portions and put into separate bowls.
Mix a few drops of food coloring into each bowl until you get the color you like.
In a medium skillet over low heat, pour very small circles of batter, about the size of a half dollar.
Cook on each side for about 2 minutes. Be careful not to let get brown, as the color will not be as vibrant.
Makes about 48 pancakes.
Serve with syrup, whipped cream, or fruit for a delicious and fun breakfast.
