Cherry Cheesecake Cookie Cups Recipe
Who doesn't love cheesecake? or sugar cookies? With this recipe you get the all the flavor of both. Cherry cheesecake, served in mini sugar cookie cups, yes please! They're super easy to make and are perfect for serving a crowd and taste absolutely amazing!
Cherry Cheesecake Cups Ingredients
- Sugar cookie dough *or use from-scratch recipe
- Cream cheese
- Vanilla
- Whipped cream topping
- Cherry pie filling
- Chocolate sprinkles or melted white chocolate, optional garnish
How to Make the Cheesecake Sugar Cookie Dessert
1. Preheat oven to 350F.
2. Grease a muffin tin or tart tin
and press 1-2 Tablespoons of cookie dough into each indentation and press to shape into a cup shape (along the bottom and sides of the indentation).
3. When each muffin tin is full, bake the cookie cups for 8-12 minutes (will vary depending on the size of your tin).
4. Allow the cookie cups to cool in the muffin tray on a cooling rack
before removing.
5. For the cream cheese filling, mix together with hand mixer the vanilla, cream cheese and whipped cream until fully combined, be careful not to over mix.
6. Spoon 1-2 Tablespoons of the cream cheese filling into the cookie cups and top with 1 Tablespoon of the cherry pie filling.
7. Sprinkle with chocolate sprinkles or drizzle with melted white chocolate, if desired.

- Unsalted butter
- Sugar
- Egg
- Vanilla extract
* How to Make Sugar Cookies from Scratch
1. Cream the butter and sugar together with a mixer until light and fluffy, about 2 minutes.
2. Add in the eggs and vanilla.
3. In a separate bowl, stir together the flour and baking powder and then slowly add it to the sugar-butter mixture.
4. Once all of the flour is incorporated into the dough, form into a ball and cover with plastic wrap.
5. Refrigerate for 30 minutes before shaping into cookie cups. Press into pan with a small scoop.
