Ingredients
Cheese
- 4 oz Cheddar cheese, small cubes
- 4 oz Pepper jack cheese small cubes
- 4 oz Colby jack cheese small cubes
- 2- 8 oz double creamed Brie cheese
- 1 20 oz – double creamed Brie Cheese
- 6 Babybel cheese rounds
- 2 cups Fresh Mini Mozzarella
- 4 oz Blueberry Goat Cheese log
Olives
- 1⁄4 cup whole black olives, pitted
- 1⁄4 cup whole green olives, pitted
Meats
- 7 slices salami, for the Mickey, heads
- 7 slices pepperoni, for the Mickey, heads
- 9 oz. uncured Genoa salami, circle cut, folded in half
- 9 oz. Uncured Pepperoni circle cut, folded in half
- Fruits and Veggies
- 1⁄2 cup Raspberries
- 1⁄2 cup Blackberries
- 1⁄2 cup Blueberries
- 1 cup Strawberries
- 20-30 baby tomatoes
- 2 cups Broccoli
Extra’s
- 2 SM Ramekins filled with jam of choice
- Black edible markers
- Naan Dippers
Instructions
- Using your black markers color the outer coating of the 8oz Brie’s on one side only. Set to the side.
- Take your 20 oz Brie and draw out the Mickey face using the black marker.
- Color in the face outline, nose, and eyes. Set to the side.
- Place the 8 oz black Brie rounds next to the Mickey face Brie.
- Cut the smaller Brie rounds tightly against the Mickey face Brie. Set to the side to dry.
Salami Mickey Mouse Heads
- Take your first slice of salami or pepperoni and lay it on a clean surface or cutting board.
- Lay the next salami or pepperoni on top of the previous meat only covering half of the bottom of that meat.
- Repeat with 4 more salami or pepperonis round slices.
- Now roll the deli meat up into a circle.
- Place the meat circle in a small glass and set it to the side.
- Begin the Mickey ears by rolling up 1 salami or pepperoni round into a small circle.
- Use toothpicks to adhere the ears to the Mickey Head.
- Create a second Mickey head and set it to the side.
Putting it All Together
- Place the Santa Mickey Brie on the board.
- Place the face on the bottom half leaving 4 inches from the bottom.
- Add your small jam-filled ramekins to the board, leaving room for Santa’s hat.
- Begin to create the Santa hat with your baby tomatoes.
- Place your Mickey salami/pepperoni heads on the board.
- Create your Santa “poof” on the edge of Santa’s hat with 1⁄4 of your mini mozzarella.
- Begin to add your diced cheese, naan dippers, broccoli, and fruit to the board.
- Place the folded meat on the board.
- Fill in any holes you may have on your board with your olives.
- Begin to create the trim to Santa’s hat using the remaining mini mozzarella.
