This simple side dish is made by roasting potatoes in bacon fat for added flavor! Oven Roasted to perfection.
These potatoes sprinkled with bacon, cheddar cheese, and parsley and roasted until crispy making an easy, irresistible side dish.
These go perfect as a side dish to the Cajun Chicken recipe. Potatoes and onions pack a punch of flavor but adding bacon and garlic takes them over the top.

- 6 strips bacon
- Red potatoes, diced
- Salt
- Black pepper
- Garlic powder
- Dried basil
- Dried parsley
- Cheddar Cheese (optional)

How to Make Roasted Potatoes with Bacon Recipe
Preheat the oven to 400 degrees.
Line a baking sheet with foil and place the bacon flat on the baking sheet. Bake for 8 to 10 minutes, until the bacon is crispy.
Remove the bacon from the pan and transfer to a paper towel-lined plate to cool.
Place the diced potatoes in a bowl and season with salt, pepper, garlic powder, basil, and parsley.
Add 2 tablespoons of bacon grease to the bowl and toast to coat the potatoes.
Remove the foil from the pan and discard remaining grease.
Spread the potatoes in an even layer over the pan and return the pan to the oven. Bake for 45 to 50 minutes, until the potatoes are tender inside and brown outside.
Add shredded cheddar cheese if desired and return to oven for another 5 minutes.
Chop the bacon slices and sprinkle the chopped bacon over the top of the potatoes before serving.
