Copycat Cheesecake Factory BBQ Ranch Chicken Salad Recipe
With summer coming up, everyone will be starting to look for yummy salads that don't require heating up the kitchen. Of course here in Florida, we are already having 90 degree days so these are perfect. One of my favorites is Cheesecake Factory's BBQ Ranch Chicken Salad. The best part about our copycat recipe is that it uses a rotisserie chicken. We skipped the onion rings on this one but if you want to add them, check out our Air Fryer Onion Rings to add to it.
Chicken Salad with Ranch Dressing Ingredients
- Romaine lettuce, chopped
- Rotisserie chicken, skinned and cubed
- Cucumber cut in quarters
- Tomatoes cut in half
- Corn, drained
- Black beans, drained and rinsed
- Green onions, chopped
- Avocado, peeled and sliced
Dressing:
- Hidden Valley Ranch dressing
- Kraft Original BBQ sauce ( use 1+ tablespoon for the dressing)
How to Make a Copycat Wendy's Shredded BBQ Chicken Salad
1. Toss the chopped romaine in a large bowl. Add the chicken cubes.(Set aside some of the chicken to put on top of the lettuce/chicken combination.
2. Position the lettuce/ chicken in the middle of the serving plate.
3. On of the four corners of the plate put the corn, black beans, cut baby tomatoes, and quartered cucumber.
4. Add the remaining chicken on the top of the lettuce, Top with the chopped green onions.
5. Pour the bottle of ranch dressing into a bowl. Begin by adding 1 tablespoon of the BBQ sauce and stir until well blended. Taste to ensure flavor. If necessary add more BBQ sauce to the dressing and stir well.
6. Position the sliced avocado on top of the salad.
7. Pour the salad dressing on top of the entire salad.
8. Drizzle with the remaining BBQ sauce.
