Pumpkin season is in full swing and these soft and chewy pumpkin cookies melt in your mouth.

It’s fall, and that means it is the perfect time to bake some pumpkin cookies.

These soft and chewy pumpkin cookies are just what you need for your children’s Halloween parties or even Thanksgiving!

Soft and Chewy Pumpkin Cookies

They’re easy to make and require just 8 ingredients, most of which you probably already have on hand.

Makes 24 cookies

Prep time: 10 minutes

Chill time: 1 hour

Cook time: 15 minutes

  • Butter softened
  • Sugar
  • brown sugar
  • Pumpkin puree
  • Egg
  • Vanilla extract
  • Flour
  • Baking soda
  • Baking powder
  • Pumpkin spice

How to Make Delicious Pumpkin Cookies

In a medium bowl, beat together the butter, sugar, and brown sugar until smooth and creamy.

Add the pumpkin, egg, and vanilla and beat to combine.

In a separate bowl, whisk together the flour, baking soda, baking powder, and pumpkin spice.

Add the dry ingredients to the butter mixture and beat to combine.

Cover the bowl with plastic wrap and chill for at least 1 hour.

When ready to bake, preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Combine the sugar, pumpkin spice, and cinnamon in a small bowl.

Use a cookie scoop to scoop out the dough and roll it into a ball between your hands.

Roll the cookies in the sugar mixture and place them on a baking sheet.

Press each cookie down slightly with your fingers.

Bake in the preheated oven for 13 to 15 minutes, until golden brown.

  • Brown sugar ½ cup
  • Pumpkin puree 1 cup
  • Egg

  • 3 cups flour
  • Baking soda 1 teaspoon
  • Baking powder 1 teaspoon
  • 2 teaspoons pumpkin spice

  • Pumpkin spice 1 teaspoon
  • Ground cinnamon 1 teaspoon
